Creamy Vegan Cauliflower Soup

Here is the recipe for my Vegan Cauliflower soup thats full of flavor, has no diary and is completely plant based. For the New Year I'm trying to implement more plant based, recipes in my diet.  I was a vegetarian for over 6 years, and while I don't advocate being Vegan or Vegetarian, I do believe in balance. I don't think meat is bad, but unfortunately the sources available to us when purchasing meat is what I do have an issue with.  Because of this, like most individuals I seek other ways to give my body whole foods that are clean and simple that my body can utilize properly. This soup is an all star thanks to cauliflower.  One serving of cauliflower contains 77 percent of the recommended daily value of vitamin C. It's also a good source of vitamin K, protein, thiamin, riboflavin, niacin, magnesium, phosphorus, fiber, vitamin B6, folate, pantothenic acid, potassium, and manganese according to Dr. Mercola.  I'm currently in Kentucky and a beautiful layer of snow has fallen, this is the perfect soup to warm you up, and it makes me feel a little bit better about my New Year resolution.

Ingredients: 

2 tablespoons coconut oil 2 teaspoons minced garlic 1 teaspoon pink Himalayan sea salt, or to taste 1 large head cauliflower, chopped 5 cups Veggie broth 1/4 cup soaked raw unsalted cashews.   I soak mine overnight in filtered water.

Directions: 

Place all ingredients in a blender or Vitamix and blend.

To warm place blended ingredients in a saucepan on the stove.  Bring to a simmer then serve.

Top with chives or coconut bacon
