Parmesan Chicken Cabbage Salad with Lime Vinaigrette

I love a good salad, especially when it's crispy, light and tangy.   The best thing about this salad is it keeps well for a few days in the fridge.  Cabbage won't wilt easily like lettuce so you can pre-chop your cabbage ahead of time, and mix in your ingredients when ready. Feel free to add tomatoes, and  avocado, as well.

2 Cups Chopped Cabbage

1 Cup Grilled Chicken

1/2 Cup Cilantro

1/2 Cup Parmesan Cheese

3 Tablespoons Olive Oil

1/2 Lime

Salt (to taste)

Pepper (to taste)


Mix cabbage, grilled chicken, cilantro, parmesan cheese, olive oil, 1/2 lime, salt, and pepper to a large mixing bowl.  Mix all the ingredients together, place in serving bowl and serve.

This salad is perfect for spring, and super refreshing.
